Seriously Yummy (and healthy) Potato Salad

Ok, So I probably toot my own horn when it comes to cooking one too many times, but damn… this salad is pretty amazing and not at all unhealthy. healthy_potato_salad1What’s in it:

Boiled Fingerling Potatoes (they should be soft, so make sure you don’t take them out of the water too early)

Spinach (wilted over low heat)

raw red onion (seriously, go at it with this one)

green onion

fresh dill (make this one count, it really pumps up the flavor)

peas (I buy them frozen and then let them thaw before adding)

plain greek yogurt (this is the dressing, so add enough to soak the other ingredients nicely)

brown mustard (I only add a tiny splash for a bit of flavor)

lots of garlic powder (because that’s always a good idea)

cayenne pepper (make sure you add enough to feel a little kick or two)

sea salt


Just mix these up and enjoy!

I don’t do proportions so just feel it out… taste it after you’ve added everything to make sure there’s enough salt/cayenne
